Bacteriological quality assessment of fresh marketed lettuce and fennel

Abstract: One-hundred and twenty samples of lettuce and 89 samples of fennel purchased from five retail outlets in the city of Bari (Italy) from October 1973 through September 1975 were examined for viable aerobic bacteria (AB), total coliforms (TC), fecal coliforms (FC), fecal streptococci (FS), and salmonellae. Comparative tests indicated that the results of bacteriological analysis of wash water from either vegetable by a membrane filter technique compared favorably with those of conventional cultural examination of … Show more

“…A maximum acceptable concentration of 5.0 LogCFU/g of aerobic mesophylls on fresh-cut vegetables is suggested by literature (Mossel 1982;Solberg et al 1990) but TPC values obtained from this study ranged from 6.00 logCFU/g to 13.64 LogCFU/g. Munuera et al (1994) also had lettuce samples with TPC values higher than 5.0 LogCFU/g in 61.5% of lettuce from different markets and street stands TPC values of 5.7, 7.8, 5.2, and 6.1 LogCFU/g were also reported for lettuce from salad bar, retail outlets, packaged vegetables, and grocery stores, respectively (Ercolani 1976;Garg et al 1990;King et al 1991;Albrecht et al 1995).…”

“…The results presented here indicate that leaf age and position at harvest have a significant effect both on bacterial population sizes and on decay during storage. Smaller bacterial population densities on inner leaves in the head of lettuce (Ercolani, 1976), cabbage (Geeson, 1979) and broad-leaved endive (Morris & Lucotte, 1993) at harvest were previously reported. Crops with different morphologies also carry variable population sizes according to leaf position or leaf age during field cultivation (Andrews et al, 1980, Jones et al, 1985Plummer et al, 1992).…”
