“…According to an investigation into outbreaks of collective foodborne disease (CBD) in Kenitra Provincial Hospital during the period (2007 -2009), they revealed 14 cases of CBD in the Gharb-Chrarda-Bnihsein region, with the largest number of outbreaks reported in Kenitra city with a percentage of 50%, including poultry meat which is among the foodstuffs responsible for CBD with a rate of 14% [4]. During slaughter and processing, all potentially edible tissues are subjected to contamination from a variety of sources within and outside the animal [5]. The pathogenic microorganisms that are implicated in contaminating meat and its products include; Salmonella spp., Shigella spp., Campylobacter jejuni, Campylobacter coli, Yersinia enterocolitica, verotoxigenic Escherichia coli and Listeria monocytogenes [6].…”

“…Due to its simplicity, speed, and specificity, polymerase chain reaction (PCR) applications have been widely used ( Kesmen et al ., 2007 ; El-Demerdash et al ., 2023a ). According to several studies ( Abuelnaga et al ., 2020 ; Shalaby et al ., 2021 ; Megahed et al ., 2023 ), multiplex PCR is a powerful approach that can simultaneously amplify several templates, lower the detection rate, and get beyond the restrictions of a single PCR that only targets one type of meat at a time.…”

“…Meat is an important wellspring of different micronutrients, which are fundamental for development. It contains about 20 to 35% protein, all essential amino acids, fatty acids, minerals, and vitamins (Abuelnaga et al 2020). The highest produced meat categories in the world were bovine, poultry and pig (Fengou et al 2021).…”
