“…Their presence in the fraction bound to heparin is likely to be fortuitous. Interestingly enough, the antibacterial activity of six of the proteins of this list or their mammalian counterpart have already been reported to be antibacterial: AvBD1116, OVAX17, lysozyme18, ovotransferrin19, avidin20, pleiotrophin5, and TENP21, which validates the initial strategy. An antibacterial activity against Listeria monocytogenes was observed in the diluted raw egg white and in both heparin-unbound and heparin-bound fractions to heparin, at 500 μg/mL (Fig.…”

“…In animal nutrition, it is therefore advised to avoid feeding uncooked raw material containing egg white (NRC 1993(NRC , 2011Halver 2002;Higdon 2003). Pure avidin isolated from eggs and dried egg white have been used as dietary supplements to induce an experimental biotin deficiency in cats, hamsters, pigs, rats and humans as well as in several fish species (Poston 1976;Castledine et al 1978;Lovell & Buston 1984;White et al 1992;Maeland et al 1998;Lall 2010;Yossa et al 2011aYossa et al ,b, 2013bSarker et al 2012).…”

“…This free yolk biotin may penetrate through the vitelline membrane into the egg white in the later phases of embryogenesis, where it is probably trapped by avidin ( Bush and White, 1989 ; White and Whitehead, 1987 ). Once the biotin is irreversibly bound to avidin, it becomes unavailable to the embryo until the day before hatching, when the embryo usually swallows the rest of the egg white and withdraws the yolk sac into its abdomen ( White et al, 1992 ). There is strong evidence for the negative effect of biotin deficiency on growth performance in birds ( Whitehead et al, 1985 ; Watkins, 1989 ; Zhu et al, 2012 ).…”
