Assessment of properties of gluten‐based edible film formulated with beeswax and DATEM for hamburger bread coating

Abstract: Using edible films and coatings is one of the effective methods of improving the quality of bread. The aim of the present work was the development of gluten‐based films containing lipids to be applied as bread coating, intending to improve quality and delay staleness.
