Recent scientific studies have established a relationship between the consumption of phytochemicals such as carotenoids, polyphenols, isoprenoids, phytosterols, saponins, dietary fibers, polysaccharides, etc., with health benefits such as prevention of diabetes, obesity, cancer, cardiovascular diseases, etc. This has led to the popularization of phytochemicals. Nowadays, foods containing phytochemicals as a constituent (functional foods) and the concentrated form of phytochemicals (nutraceuticals) are used as a preventive measure or cure for many diseases. The health benefits of these phytochemicals depend on their purity and structural stability. The yield, purity, and structural stability of extracted phytochemicals depend on the matrix in which the phytochemical is present, the method of extraction, the solvent used, the temperature, and the time of extraction.

Gardenia jasminoides Ellis, a typical representative for "homology of medicine and food", can be used to produce gardenia yellow and edible oil. Here, aqueous enzymatic extraction (AEE) combined with pu ng pre-treatment was explored to prepare oil from gardenia seeds. Free oil yield (FOY) by AEE was evaluated in term of selection of enzyme, enzyme combination, as well as pu ng ways and conditions. Results suggested that seeds taken as raw materials were better than whole fruit, sequential hydrolysis was superior to single enzymatic hydrolysis. Both wetheating pu ng at 90℃ and dry-heating pu ng at 1.0MPa facilitated the release of free oil by AEE, while FOY produced the highest oil yields of 21.8% and 23.2% within 3h, and 58.3%, 68.4% higher than that of un-puffed group, active crocin and geniposide were also completely released. The FOY obtained in this study was far higher than pressing method (10.44%), and close to solvent extraction (25.45%). Also, microstructure analysis indicated that gardenia seeds expanded by dry-heating pu ng (1.0MPa) had larger and rougher surface and porous structure than other groups. Moreover, there was no signi cant difference between oils prepared by various methods in term of nutritional and safety characteristics. AEE coupled with pu ng pre-treatment developed is an eco-friendly extraction technology with high e ciency that can be employed to oil preparation enriched with active crocin and geniposide from gardenia seeds.

The objective of this study was to produce sunflower oil using pectinase, flavor protease, and alkaline protease. The optimal parameters for the enzymatic hydrolysis process were determined through sensory evaluation, resulting in a temperature of 120°C, a duration of 30 minutes, a polysaccharide to protein ratio of 2:1 for the enzymatic hydrolysate, and an enzymatic hydrolysate to oil ratio of 1:3. Under these specific conditions, the sunflower oil (K4) achieved the highest sensory score of 13.9, exhibiting a pronounced oily flavor alongside moderate baked and nutty flavors. Compared to the controls of first‐grade sunflower oil (K1), sunflower kernel oil (K2) and sunflower oil prepared by roasting (K3), the acid value (AV) in K4 exhibited a statistically significant decrease compared to K2 and K3, conversely, the peroxide value (PV) and BaP content in K4 demonstrated a statistically significant increase compared to K1 and K2. Additionally, the tocopherols in K4 exhibited a lower concentration compared to K1, while the sterols were effectively retained and showed no significant difference to these control groups. The fatty acid composition of the four different sunflower oil samples were analyzed, revealing that the contents of oleic acid (C18:1) and monounsaturated fatty acid (MUFA) in K4 were significantly higher than K2, and there was no significant difference compared to K1. This investigation of the present study could provide a certain theoretical basis for the production of sunflower oil by enzymes.
