“…To create the sugar sweetness index, we assumed that total sugar was equivalent in sweetness to sucrose (tabletop sugar). We selected sucrose because the sweetness is measured using reference solutions containing different sucrose concentrations in increasing amounts, and the sweetness of NNS is also measured in sucrose equivalents ( 10 , 32 37 ).
