Aptamer-Based Fluorescent Biosensor for the Rapid and Sensitive Detection of Allergens in Food Matrices

Abstract: Food allergies have seriously affected the life quality of some people and even endangered their lives. At present, there is still no effective cure for food allergies. Avoiding the intake of allergenic food is still the most effective way to prevent allergic diseases. Therefore, it is necessary to develop rapid, accurate, sensitive, and reliable analysis methods to detect food allergens from different sources. Aptamers are oligonucleotide sequences that can bind to a variety of targets with high specificity a… Show more

“…Numerous aptasensors have been proposed for food safety monitoring, including aptamer-based colorimetric [ 24 ], fluorescent [ 12 , 25 ], electrochemical [ 26 , 27 ], and SPR biosensors [ 28 ]. Wang et al used an aptamer screening kit to rapidly screen aptamers of foodborne Vibrio parahaemolyticus [ 29 ].…”

“…In particular, fluorescent biosensors have attracted considerable attention owing to their simplicity, rapidity, accuracy, and in situ detection [ 11 ]. Furthermore, their spectral properties and fluorescence anisotropy can be used alone or together for the signal output [ 12 ]. These advantages make them suitable for use in food safety analysis.…”

“…Fluorescence detection technology has been widely employed for the development of aptasensors for food allergens [ 65 ]. In most cases, the aptamers were labeled with fluorescent dyes or, more recently, nanosized labels, such as quantum dots (QDs), even though assay formats employing unlabeled aptamers are also possible [ 66 , 67 ].…”
