Application of Supercooling for the Enhanced Shelf Life of Asparagus (Asparagus officinalis L.)

Abstract: Freezing extends the shelf-life of food by slowing down the physical and biochemical reactions; however, ice crystal formation can result in irreversible damage to the cell’s structure and texture. Supercooling technology has the potential to preserve the original freshness of food without freezing damage. In this study, fresh asparagus was preserved in a supercooled state and its quality changes such as color, weight loss, texture, chlorophyll and anthocyanin content, and enzymatic activities (superoxide dism… Show more

“…To improve the shelf life and quality of fresh fruits and vegetables, cold storage should be managed properly with regard to temperature, relative humidity levels, air flow, space between storage containers, mixing of compatible produce (e.g., according to temperature demand, odor production and ethylene sensitivity), as well as the management of product in-and outflow, which should follow the 'First In, First Out' principle [28,33,41,42]. In fact, the principle is to store each crop separately and the climacteric products at similar maturity stages.…”

“…In other words, the reduction of storage temperatures by 10 • C will double the shelf life of horticultural crops [62], as presented in Table 4. Therefore, food deterioration can be addressed by controlling temperature, relative humidity and atmospheric composition (levels of oxygen, carbon dioxide and ethylene), and the sanitation of storage facilities [16,20,42]. Temperature control in the cold storage of fresh crops is of paramount importance.…”

“…To increase the lifespan and nutritional value of fresh vegetables and fruits, the best possible control of cold storage conditions is required. These conditions include relative humidity levels, the distance between storage containers, temperature, mixing compatible produce, air flow, and product in-and outflow, which should follow the "First In, First Out" rule (You et al 2021) [41] . Actually, the idea is to preserve the climacteric goods at comparable stages of maturation and each crop individually.…”

“…Beyond its role as an important trait for the classification of asparagus, the pigmentation of spears has been correlated with anti-hyperglycemic, anti-cancer, and anti-mutagenic health benefits ( You et al., 2021 ). Asparagus pigmentation is largely due to anthocyanins, which are one of the largest and most important groups of water-soluble pigments in the plant kingdom.…”
