Application of a Check‐all‐that‐apply Question to the Development of Chocolate Milk Desserts

Abstract: Check-all-that-apply (CATA) questions could be a simple alternative to get an insight on consumer perception of a food product. In the present work, CATA questions were used in the development of chocolate milk desserts. Nine chocolate milk desserts were formulated with different sugar and cacao concentration. A consumer study was performed with 70 people, who were asked to score their overall liking and to answer a CATA question that included 18 sensory and hedonic terms. “…Sensory techniques, such as CATA (check-all-that-apply) and flash profiling, are relatively new methods for conducting consumer studies and have been used to study jams (Dairou & Sieffermann, 2002), powdered juices, (Ares et al, 2010b), iced teas (Veinand et al, 2011), and milk desserts (Ares et al, 2010a). Flash profile is a rapid sensory profiling technique designed to meet industrial needs by combining free-choice profiling with ranking.…”

The use of a smaller number of consumers with CATA method was utilized because our objective was to capture as many emotions related to coffee drinking.…”

“…Estudos que comparam sua eficiência em relação ao uso de avaliadores treinados relatam altas correlações detectadas entre as avaliações, evidenciando que os consumidores são capazes de avaliar os atributos sensoriais de uma forma semelhante (BRUZZONE et al, 2012;ARES et al, 2010). Sua principal limitação, segundo Dolley et al (2010), reside no fato de não serem medidas as intensidades dos atributos apresentados na lista.…”
