Antioxidant Capacity and Nutritional Value of Potato Tubers (Solanum tuberosum L.) as a Dependence of Growing Conditions and Long-Term Storage

Abstract: The aim of the study was to assess the interactive effect of the use of bio-fertilizer and organic matter brought into the soil, as well as to limit the use of mineral fertilization on the content of bioactive compounds in potato tubers cultivar ‘Satina’. The test results show a positive effect of the applied bio-fertilizer in all tested variants of organic fertilization (straw, fodder pea, manure) on the level of the tested compounds. Comparing the content of crude protein in tubers from plots where half the … Show more

“…In the literature, can be find research showing a large variation of TAA among potato cultivars/clones, and many other factors having an impact on their level in potato tubers. For example, Wichrowska [46] reported a significantly differentiated TAA of potato tubers cv measured using the FRAP method. The highest TAA was characteristic of tubers from the plots fertilized with manure, a full dose of mineral fertilization and bio-fertiliser.…”

“…Content of starch, essential amino acids and low fat concentration determine the nutritional value of potato tubers. They are also a source of bioactive compounds, including ascorbic acid and polyphenols, with their concentrations of the same order of magnitude as in coffee, grapes, blueberries and almonds 2 . Potatoes with special culinary, economic and health attractiveness belong to varieties with red and purple flesh.…”

“…The introduction of organic matter to soil is one of the more effective methods of restoring soil biodiversity and balance between populations of beneficial and pathogenic microorganisms [42,49,50]. Different types of microbiological preparations, effective microorganisms, and soil conditioners can play a similar role [51,52]. Many authors point out that their use in the cultivation of different plant species has had a positive effect on the yield, the content of nutrients, and bioactive substances [53][54][55][56][57].…”
