Antioxidant Capacities and Phenolic Profiles of Ottoman Strawberry Fruit and Ottoman Strawberry Jam

Abstract: The objective of this study was to quantify the antioxidant capacity of four wild strawberry cultivars (Ottoman) harvested in Elazig, Alkaya, Kargucak and Pences as different species of Fragaria vesca and two Ottoman strawberry jams by various spectrophotometric methods (TPC, CUPRAC, TFC, DPPH, ABTS, FRAP) and to evaluate their phenolic profile by HPLC-DAD.
