Antioxidant activity, mineral content and dietary fiber of grains

Abstract: The aim of this investigation was to evaluate the antioxidant activity, mineral content and dietary fiber of unprocessed and processed pearl millet, sorghum and mung bean grains. The methanolic extracts of different grains flours were analyzed for 1,1-diphenyl-2-picrylhydrazyl (DPPH) free radical scavenging activity. The samples were also evaluated for dietary fiber, mineral content and available mineral. The results indicated that the highest amount of total, soluble and insoluble diet… Show more

“…This is coupled with a comparatively large germ proportion than cereals such as sorghum which contributes to its higher nutritive value (Satankar et al, 2020). The essential amino acids include higher content of leucine, isoleucine and lysine comparable to wheat and rye (Hulse et al, 1980;Rana and Dahiya, 2019). Furthermore, the crop is gluten-free, high in calcium, iron, zinc, vitamin A, riboflavin compared to other cereals Pearl Millet as a Sustainable Alternative Cereal for Novel Value-added Products in Sub-Saharan Africa: A Review (Table 1).…”

“…Furthermore, competitively inhibit the growth and development of other microorganisms. As well, it has a protective effect against various diseases such as constipation, diverticular disease, large bowel cancer, diabetes, coronary heart disease and obesity and gall stones (Rana and Dahiya, 2019). On the other hand, the acidic environment produced by microbial fermentation of fibers inhibits the proliferation of some pathogenic bacteria…”

“…Oxidative stress (OS) has been one of the main interests of the scientific community for centuries. During the cell metabolism mechanism, a series of reactive oxygen species (ROS) are synthesized, such as superoxide anion, hydrogen peroxide and hydroxyl radicals (Rana and Dahiya, 2019). The imbalance between antioxidant defense system and ROS may lead to patho-biochemical mechanisms caused by the development of different degenerative diseases (Kaur et al 2019).…”
