Antioxidant activity and calcium binding of isomeric hydroxybenzoates

Abstract: The association constant for calcium binding to hydroxybenzoates in aqueous 0.16 M NaCl at 25 °C was found electrochemically to have the value K = 280 mol L with ΔH = -51 kJ mol, ΔS = -122 J mol K for the 2-isomer (salicylate), K = 7 mol L with ΔH = -39 kJ mol, ΔS = -116 J mol K for the 3-isomer, and K = 8 mol L with ΔH = -51 kJ mol, ΔS = -155 J mol K for the 4-isomer. Studies by Zhao et al conclude that calcium affects the antioxidant activity of simple phenols extracted from plants, such as hydroxybenzoates [49,50].
