Antimutagenicity of Korean Sweet Potato (Ipomoea batatas L.) Cultivars

Abstract: Polyphenolic content and antimutagenicity of the methanol extracts prepared from 22 cultivars of sweet potato with different flesh colors were investigated using Folin-Ciocalteu's phenol reagent method and Ames test, respectively. There was a remarkable cultivar difference in the polyphenolic content of sweet potato. Su, Hayanmi and Shinhwangmi among 17 cultivars of non-purple sweet potato had higher polyphenolic contents of 21.4, 21.5 and 20.3 μg (GAE/g dried sweet potato), respectively, whereas Manami and Ye… Show more

“…This finding was because colored sweet potatoes contain more phenolic compounds than common sweet potatoes. In particular, in purple sweet potatoes (Sinjami), the total phenol content is higher than that in common and orange sweet potatoes owing to the large amount of anthocyanin pigments [ 24 , 25 , 26 ].…”

“…In vitro and in vivo studies have shown that purple sweet potato anthocyanins have antioxidant, anticancer, and antimutagenicity activities [ 14 , 15 , 16 ]. In addition to anthocyanin, purple sweet potato also contains chlorogenic, dicaffeoylquinic, caffeic, and ferulic acids [ 17 , 18 ].…”
