This study was aimed at determining the occurrence of Staphylococcus species in ready-to-eat (RTE) Rhynchophorus phoenicis (edible larvae) and Archachatina marginata (land snail) vended along Port Harcourt-Bayelsa route. Eighty samples from four locations were analysed employing standard techniques for proximate and microbiological analyses; virulence determination and antibiotic susceptibility. Data were statistically analyzed using ANOVA and t-test. The mean proximate results revealed the presence of protein (26.01/13.6%), lipid (18.9/3.88%), fibre (5.12/2.01%), ash (3.40/1.11%), moisture (13.47/59.5%) and carbohydrate (32.43/20.07%) for edible larvae/snail, respectively. Of the 80 samples examined, 33 (41.25%) and 52 (65.00%) had total viable bacterial counts and total staphylococcal counts above acceptable microbiological limits, respectively for RTE foods. Seven of the 81 characterized Staphylococcus produced the expected band of 950 bp with sea virulent genes while three produced expected bands of 550 bp with seb virulent genes. Three Staphylococcus aureus strains from edible larvae harboured both virulent genes. The virulent genes bearing Staphylococcus were 100% resistant to augmentin, ceftazidime and cloxacillin but showed varying resistance against ceftriaxone (57.14%), cefuroxime (28.57%), vancomycin (42.86%), oxacillin (42.86%) and cefoxitin (42.86%). The study showed that these RTE foods are potential sources of staphylococcal food poisoning in commuters; hence, food vendors need to conform to standard practice.

Antimicrobial resistance associated with salmonellosis is a major global public health challenge. This study investigated the resistance and plasmid profile patterns of typhoidal Salmonella serovars isolated from human faecal samples to commonly used fluoroquinolones. A total of 300 faecal samples were collected from three tertiary hospitals in South-East Nigeria. The isolates were characterized using standard phenotypic, molecular and antibiogram studies. Antibiogram studies were evaluated using ciprofloxacin and ofloxacin discs. Data were analysed with descriptive statistics, t-test and 2-way analysis of variance. Out of 300 faecal samples, (129) 43% yielded Salmonella spp and (62) 48% were confirmed to be typhoidal Salmonella serovars. The antibiogram study on the 62 typhoidal Salmonella serovars showed that ( 22) 35 % and (4) 7 % were sensitive, ( 27) 44 % and (28) 45 % were intermediate, ( 13) 21 % and (30) 48 % were resistant to ciprofloxacin and ofloxacin respectively. The plasmid profile revealed the presence of DNA with molecular weight ranging from 10 to 37 kb. The isolates had higher molecular weight than the control that was used for the plasmid profiling. On exposure to a curing agent (acridine orange), all the resistant isolates became sensitive. This study showed that the incidence of resistant typhoidal Salmonella to most commonly used fluoroquinolones is high in South-East Nigeria and this could be as a result of plasmid resistant DNA. It also indicated that the indiscriminate use of ciprofloxacin and ofloxacin within the South-East region of Nigeria may increase the typhoidal Salmonella resistance.

The study aimed at evaluating the microbiological safety of vended foods in selected motor parks in Obio/Akpor Local Government Area, Rivers State, Nigeria. Forty-eight samples obtained from four motor parks (Choba, Rumuokoro, Eliozu and Oil-mill Park) were analyzed using standard microbiological methods for total heterotrophic bacteria count, virulent and antibiotic resistant profiles of Staphylococcus aureus and Escherichia coli. Total heterotrophic bacteria count ranged from 4.60 to 8.39 log10CFU/g. A total of 10 (20.83%) samples were positive for S. aureus while 14 (29.17%) were positive for E. coli. Total staphylococcal and Escherichia coli counts ranged from 4.89 to 7.01 and 2.70 to 5.31 log10cfu/g, respectively. Both bacteria were 100% resistant to augmentin. The confirmed E. coli showed varying resistant to cefixime (50%), ceftazidime (42.86%), cefuroxim (14.29%) and ofloxacin (7.14%); while S. aureus also showed varying resistant to erythromycin (10.00%), ceftriaxone (90.00%), cloxacillin (100.00%) and gentamycin (0.00%) The confirmed E. coli produced the expected bands for the E. coli attaching and effusing (eaeA), aggregative adherence fimbriae (aggR) and antimicrobial sensitivity testing (astA) virulence genes while S. aureus did not produce the expected bands with staphylococcal enterotoxin A (sea) and staphylococcal enterotoxin B (seb) genes. The detection of virulence gene bearing E. coli and multiple antibiotic resistant E. coli and S. aureus portends danger for commuters who patronizes these foods, hence the need for urgent public health interventions.
