Yerba Mate is a popular tea beverage produced and consumed in the South American countries of Argentina, Brazil, Chile, Paraguay, and Uruguay, and is processed from the leaves and stems of Ilex paraguariensis A. St.-Hil., a perennial shrub from the Aquifoliaceae family. Production occurs in six stages: harvesting older leaves and small stems, roasting by direct fire, drying under hot air, milling to specified size, aging to acquire optimal sensory attributes, and final packaging. While grown and consumed for centuries in South America, its popularity is increasing in the United States because of demand by consumers for healthier, more natural foods, its filling a niche for a different type of tea beverage, and for Yerba Mate's potential health benefits-antimicrobial, antioxidant, antiobesity, anti-diabetic, digestive improvement, stimulant, and cardiovascular properties. Cultivation, production and processing may cause a variation in bioactive compounds biosynthesis and degradation. Recent research has been expanded to its potential use as an antimicrobial, protecting crops and foods against foodborne, human and plant pathogens. Promising results for the use of this botanical in human and animal health has prompted this review. This review focuses on the known chemical composition of Yerba Mate, the effect of cultivation, production and processing may have on composition, along with a specific discussion of those compounds found in Yerba Mate that have antimicrobial properties.

RESUMODentre as inúmeras espécies da ora nativa brasileira, encontra-se a Ilex paraguariensis, conhecida popularmente como erva-mate. Estudos atribuem diversas atividades biológicas para essa espécie. O trabalho teve por objetivo avaliar a atividade antifúngica e antibacteriana do óleo volátil, extrato das folhas e dos ramos da I. paraguariensis. O material vegetal foi coletado na URI (28°16'41.4"S 54°16'13.0"W) em Santo Ângelo -RS/Brasil, sendo moído e ltrado e o óleo volátil obtido por hidrodestilação. A atividade antimicrobiana foi avaliada empregando a técnica de difusão em meio sólido Brain heart infusion (BHI). As bactérias utilizadas foram Corynebacterium mi, Listeria monocytogenes, Bacillus cereus, Staphylococcus aureus, Salmonella enteritidis e Escherichia coli. Para a atividade antifúngica, foi empregado o método de difusão em meio sólido ágar Patato dextrose (PDA), e os fungos utilizados foram Aspergillus phoenicis isolado, Aspergillus niger, Fusarium sp. e Fusarium sp. isolado clínico. As alíquotas empregadas foram as mesmas, tanto para as bactérias quanto para os fungos, de 25 e 50 µL nas concentrações de 50 e 100 mg/mL do óleo e extratos. Os resultados obtidos, quando comparados aos resultados de inibição do antifúngico comercial Fox ® , usados como padrão comparativo, comprovaram a acentuada atividade antimicrobiana apresentada pelo óleo de I. paraguariensis. Entre os diferentes extratos testados, o de folhas apresentou melhor resultado para atividade antimicrobiana, com a concentração de 100 mg/mL do óleo. O óleo volátil de I. paraguariensis, por apresentar halos de inibição superiores a 10 mm, indica uma boa atividade antimicrobiana. Essential oil monoterpenes (α‐terpinene, (+)‐limonene, α‐pinene, 1,8‐cineole) of the spice Aframomum danielli were tested for in vitro antifungal activities against some food spoilage yeasts (Torulopsis candida, Candida tropicalis, Kluveromyces thermotolerans, K. fragilis, Hansenula anomala and Pichia pastoris) and mycotoxigenic moulds (Aspergillus flavus, A. parasiticus). With α‐terpinene, the mean minimum inhibitory concentrations (MICs) for T. candida, K. fragilis, K. thermotolerans and C. tropicalis were found to be 4.9, 39, 78 and 156 μg/ml, respectively. With (+)‐limonene, the mean MICs for T. candida, K. fragilis, K. thermotolerans and C. tropicalis were 39, 312, 39 and 312 μg/ml, respectively. The minimal fungal concentrations (MFCs) of the monoterpenes varied from 39 to 1250 μg/ml for the food spoilage yeasts examined. Within 60 min, α‐terpinene (312 μg/ml) reduced the population of C. tropicalis and H. anomala from 105 to 13 cells/ml. The MIC of (+)‐limonene for A. parasiticus was 78 μg/ml. As revealed by NMR, both α‐terpinene and (+)‐limonene caused membrane injury of C. tropicalis cells. Copyright © 2000 John Wiley & Sons, Ltd.
