Potentiometry utilizing redox reactions in a [Fe(CN) 6 ] 3− /[Fe(CN) 6 ] 4− redox-reagent solution has been considered as simple, highly sensitive, fast, and inexpensive method for evaluating total antioxidant activity (TAA) in various samples such as drinks, food, blood, etc. In this study, for the first time, the determination of TAA using potentiometric method has been applied to depression rating. For a depressed group of 94 persons and a normal group of 66 persons, beck depression inventory (BDI) score and TAA value were evaluated. From a comparison of BDI and TAA results, it is found that the TAA value is closely related to the BDI score and the value of TAA increases with decreasing BDI score. The plot of TAA vs. BDI exhibited a linear relationship with a negative correlation (Pearson's coefficient r = −0.318, P < 0.01). This strongly suggests that the potentiometric method for TAA determination has a potential to be used as a clinical tool in depression.

Synthesized urushiol derivatives possessing different carbon atomic length in the alkyl side chain inhibited the growth of food spoilage and pathogenic microorganisms. Particularly, non-allergenic 3-pentylcatechol showed a broad antimicrobial spectrum on an agar plate. Most food spoilage and pathogenic microorganisms were sensitive to urushiol derivatives in the liquid culture. The morphologies of the microorganisms were changed after treatment of 3-pentylcatechol.

Korean Ginseng, the root Panax ginseng CA Meyer, has been widely used as a traditional herbal medicine in East Asian countries. In this study, we investigated the effects of Korean Red Ginseng water extract (KRGE) on hepatic lipid accumulation in HepG2 cells. First, we investigated the cytotoxic effects of KRGE on HepG2 cells. Cytotoxicity was unaffected in the concentrations of 1–50 μg/ml of KRGE.Intracellular lipid accumulation was assessed by the quantification of intracellular triglyceride and cholesterol contents. KRGE decreased hepatic triglyceride and cholesterol levels. Moreover, KRGE suppressed expression of fatty acid synthase (FAS) and 3‐hydroxy‐3‐methyl glutaryl coenzyme A (HMG‐CoA) reductase, a rate‐limiting enzyme in hepatic cholesterol synthesis. These results suggest that KRGE may reduce hepatic lipid accumulation by inhibition of FAS and HMG‐CoA reductase expression in HepG2 cells. Consequently, KRGE may be beneficial as a functional food ingredient to improve various hepatic diseases by reducing hepatic lipid accumulation.
