The ban on animal protein supplements in animal nutrition and, particularly, the increase in the demand for alternative protein sources to replace soybean meal in organic farming has stimulated research on GM-free feeds and renewed interest in grain legumes. Of these lupin appears to be one of the more interesting and promising crops for ruminant diets, due to its key role in low-input cropping systems and its high protein content. The aim of this study was to evaluate the productive and nutritional characteristics of several sweet varieties of lupin seeds cultivated in the Mediterranean region. The trial was carried out during the years 2007/08 on a volcanic soil in East Sicily, employing 8 sweet cultivars belonging to Lupinus albus, L. angustifolius and L. luteus species. Yield and its components (pod plant -1 , seed pod -1 , 1000 seed weight) were evaluated. Crude protein, fibre fractions and alkaloid content were also determined. L. albus exhibited the highest yields (2.2 t ha -1 ), with an intermediate value of pod x plant (15.4). L. luteus yielded 1.5 t ha -1 and L. angustifolius 0.5 t ha -1 . L. luteus showed higher levels of crude protein (34.2%) although the greatest protein yield per hectare was recorded in L. albus (0.7 t ha -1 ). L. angustifolius showed the highest mean values of NDF (28.1%) and ADF (25%), whereas L. luteus the lowest mean values of ADL (1.75%). Six alkaloids were detected and quantified, among which, the Iso-lupanine always was the most abundant (1.5 mg 100g -1 , on average). Lower concentrations of quinolizidine were observed in L. luteus (0.9 -1.4 mg 100g -1 ) as compared with L. angustifolius (1.5 -5.5 mg 100g -1 ) and L. albus (3.8 -7.5 mg 100g -1 ). Alkaloid content was always lower than the safe limit of toxicity (< 0.20‰) indicated for human and animal consumption.

Yam is one of the most staple foods in West African countries and provides an important part of the energetic for people. This study examines chemical composition of Dioscorea cayenensis and Dioscorea rotundata Poir species dried yam chips obtained using two methods of production in Togo. Three local varieties of yams (Koukou, Kéki and Laboco) were processed in chips and were sun dried (at 28-30°C) or oven-dried (at 50°C). Nutritive components (carbohydrates, protein fats, mineral salt, vitamin C and anti-nutritional factors) of yam chips were assessed and compared with those of fresh yam. Sugar is a major component of yam chips followed by proteins, vitamin, fats, mineral salt and antinutritionals factors. For the same variety of yam, the nutritional quality depends on the method of production followed and the drying methods.

ABSTRACT:The goal of the trial was to reduce the content of antinutritional substances in pea (Pisum sativum L.) seeds in order to enhance its use in livestock nutrition. A variety of field pea (Pisum sativum L.) with a high content of antinutritional substances and favourable production traits (Gotik) was chosen. Native and heat-treated pea seeds were used to collect representative samples (n = 6) for analytical purposes. The technology (V-0 technology, Czech patent No. 285745) was further modified by adjusting the reactor temperature, the duration of exposure to that temperature, and the duration of ageing of the material treated in this way (V-I and V-II technologies). The methodology of treatment is based on exposing pea seeds to vapour, organic acids and selected oxides. The monitored parameters included antinutritional substances. As far as the antinutritional substances were concerned, the content of trypsin inhibitors in native pea seeds (P) was around 15.4 ± 0.5 TIU. After treatment with technologies V-0, V-I, and V-II its activity dropped by 83.8, 80.5 and 83.8%, respectively. The pre-treatment titre of lectins (P) was 717 ± 376. It dropped by 70.3, 35.7 and 73.2% after treatment with technologies V-0, V-I and V-II, respectively. The content of tannins measured by the amount of gallic acid in native pea seeds was 49.1 ± 2.7 mg per kg. It dropped by 41.4, 32.0 and 46.2% after the application of the above-mentioned technologies. The content of indigestible oligosaccharides causing flatulence was less affected by the treatments. The pre-treatment content of raffinose was 9.5 ± 0.5 g/kg. The drop associated with the treatment was 9.5, 6.3 and 10.5%, respectively. The pretreatment content of stachyose was 21.4 ± 0.8 g/kg and after treatment with technologies V-0 and V-II it dropped by 7.0% and by 16.4%, respectively. The application of technology V-I did not result in a drop in the content of stachyose. The content of verbascose in native pea seeds was 16.1 g/kg and the treatment with technologies V-0; V-I and V-II resulted in a drop by 7.5, 5.6 and 20.5%, respectively. As for the detected phenolic acids, with the exception of caffeic acid, not a drop, but an increase in their content was recorded. Isoflavone oestrogens such as daidzein and genistein also recorded a small increase in their content. The results of the trial lead us to conclude that the above-described methods of pea seed treatment, especially the V-II variant, proved to be useful and can be recommended for practical use.
