Analysis of the Existing Methods and Specific Features of Drying Shiitake Mushrooms

Abstract: The paper reviews and analyses the advantages and disadvantages of the existing technologies of drying shiitake mushrooms, which are a valuable source of bioactive polysaccharides, vitamins, antioxidants, etc. The findings presented in the paper show how various drying methods and their thermotechnological operating parameters affect the mechanostructural properties, chemical composition, content of aromatic substances and other compounds of mushrooms. It has been demonstrated that the traditional convection d… Show more

“…Despite HC's potential in process intensification (Katariya et al, 2020), its adoption by SMEs as a green technological processing step remains hesitant, despite offering lower capital costs compared to PEF (Avdieieva et al, 2023). HC, with various available devices (Sun et al, 2022), presents a cost-effective solution for valorizing orange peel waste.…”

“…New technologies have advantages over traditional processing and preservation technologies. They are usually better at extending the storage time of edible mushrooms and better at retaining the food quality before processing, such as color, texture, and other sensory characteristics, and reduce the damage to mushrooms caused by traditional processing 22‐25 . Some of the new processing technologies and applications are shown in Table 1.…”
