Spicy hot red pepper, the most popular spice in Ethiopia, is also locally known as berbere, which is highly valued for its pungency, flavor, and color. The spicy hot red pepper powder is used to flavor shiro and other stews, as well as different forms of condiments. The aim of this study was to measure the phytochemical content of raw spices (black cumin, garlic, ginger, and cardamom) and control hot red pepper (HRP), as well as the raw and cooked experimental and commercial spicy hot red pepper products. The samples were analyzed for phytochemical content using a spectrophotometer. Compared to raw experimental spicy hot red pepper, raw spices, and HRP, raw commercial spicy hot red pepper exhibited the highest bioactive phytochemicals. The cooked commercial spicy hot red pepper or sauté had the highest total flavonoid content (TFC) and total carotenoid content (TCC). Similarly, cooked experimental spicy hot red pepper contained the highest levels of total phenolic content (TPC) and β‐carotene. With r values ranging from 0.24 to 0.65, the TPC and TFC of raw spices were correlated with antioxidant activity. There was a significant correlation between TCC and 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) (r = .71), 2, 2′‐azino‐bis (3‐ethylbenzothiazoline‐6‐sulfonic acid) (ABTS) (r = .95), and ferric ion reducing antioxidant power (FRAP) (r = .76), as well as between β‐carotene and DPPH (r = .69), FRAP (r = .69), and ferrous ion chelating activity (FICA) (r = .78). This study verified that raw spices and their mix with hot red pepper are good sources of bioactive phytochemicals with radicals scavenging abilities in Ethiopian diets.

This study aimed to determine the contents of food substances, total flavonoid active compounds, and antioxidant activity as a substitute for synthetic antibiotic feed additives given to broiler chickens. This study was conducted using a laboratory experiment using garlic peel powder as a material, an active substance content test using a quantitative flavonoid test, and antioxidant activity. Additionally, onion peels are used as a feed additive for broiler chickens to evaluate production performance and blood profile. The material used was 189 one-day-old commercial broiler chickens (unsexing). This study consisted of 9 treatments and 3 tests. The treatment used was T0(-): basal diet, T0(+): basal diet + antibiotic (zinc bacitracin 0.10%), T1: basal diet + 0.50 % garlic peel, T2: basal diet + 0.50 % shallot peel, T3: basal diet + 0.50 % onion peel, T4: basal diet + 0.25 % garlic peel and 0.25% shallot peel, T5: basal diet + 0.25 % garlic peel + 0,25% onion peel, T6: basal diet + 0.25% shallot peel + 0.25% onion peel, T7: basal diet + 0.17% garlic peel + 0.17% shallot peel + 0.17% onion peel. The variables studied were production appearance (feed consumption, body weight gain, feed conversion ratio, production index) and blood profile (haemoglobin, haematocrit, erythrocytes, leukocytes). The experimental design used a Complete Randomized Design, and the research data were analysed using Analysis of Variance (ANOVA), if a significantly different result is obtained, it is continued with Duncan's Multiple Range Test. The results showed no significant effect of treatment (P>0.05) on production appearance (feed consumption, body weight gain, feed conversion ratio, production index) and blood profile (haemoglobin, haematocrit, erythrocytes, leukocytes. Although the addition of garlic peel powder, shallot peel, and onion peel powder can be used as a feed additive, these three ingredients can improve the immune system in broiler chickens.

Вивчено морфологічну будову та васкулярну анатомію квітки Alliumcepa. Виявлено нові морфологічні ознаки вертикальної зональності гінецею та васкулярної анатомії квітки, які раніше не використовувались у систематиці родини Amaryllidaceae. Мікроморфологічні препарати 15 квіток Allium cepa виготовили, використовуючи стандартні методи просочення рослинного матеріалу парафіном. Описано виготовлені зрізи квітки на стадії бутону завтовшки 15-20 мкм за допомогою ротаційного мікротома. Ми встановили наявність трьох вертикальних зон у гінецеї Allium cepa: в основі гнізд наявна синасцидіатна зона, вище симплікатна структурна зона, в якій містяться насінні зачатки, та гемісимплікатна зона, яка висотою займає верхню частину гнізд. Мікроморфологію та васкулярну анатомію квітки вивчали за допомогою поперечних зрізів квітів. Квітконіжка в Allium cepa біля основи містить 6 провідних пучків, які вище на рівні дають початок 12 провідним пучкам, слідам листочків оцвітини та слідам тичинок; дорзальні провідні пучки відходять вище. Дорзальні пучки плодолистика однопучкові. В центрі зав’язі утворюється провідний циліндр із дрібних провідних пучків, які вище на рівні появи гнізд реорганізуються в три півмісяцеві провідні пучки – корені вентрального комплексу. Вище ці пучки реорганізуються у 6 масивних провідних пучків і живлять насінні зачатки – вентральні пучки плодолистків. Насінних зачатків по 2 в кожному гнізді, слід насінного зачатка однопучковий. Вище гнізд зав’язі вентральні та дорзальні пучки плодолистка закінчуються сліпо. Сліди зовнішніх та внутрішніх листочків оцвітини та сліди тичинок однопучкові. Нові отримані нами дані допомогли поглибити знання про морфологію та васкулярну анатомію квітки Allium cepa та допоможуть порівняти отримані морфологічні та анатомічні особливості з ознаками, вивченими раніше, для представників родини Amaryllidaceae з метою подальшого їх використання в систематиці.
