Acrylamide in fried and baked foods has the potential to cause toxic effects in animals and humans. A major challenge lies in developing an effective strategy for acrylamide mitigation in foods without altering its basic properties. Food scientists around the world have developed various methods to mitigate the presence of acrylamide in fried food products. Mitigation techniques using additives such as salts, amino acids, cations and organic acids along with blanching of foods have reduced the concentration of acrylamide. The use of secondary metabolites such as polyphenols also reduces acrylamide concentration in fried food products. Other mitigation techniques such as asparaginase pre-treatment and low-temperature air frying with chitosan have been effective in mitigating the concentration of acrylamide. The combined pre-treatment process along with the use of additives is the latest trend in acrylamide mitigation. © 2018 Society of Chemical Industry.

Biochemical detection plays a critical role in many analytical fields. For example, blood samples include many proteins with relevance to disease diagnosis and therapeutic monitoring. Foods and beverages contain a large number of chemicals and compounds which must be quantified and characterized to ensure their compliance with safety standards. Detecting trace amounts of contaminants in ambient air or water samples is essential in monitoring the environment and protecting human health. Therefore, effective techniques for performing the rapid and reliable detection of targeted analytes are required. Compared to conventional macroscale devices, microfluidic systems have many advantages, including a greater sensitivity, a faster response time, a reduced sample and reagent consumption, and a greater portability. Accordingly, many microfluidic systems for sample detection have been proposed in recent years. The performance of such devices relies on the target analyte being present in a sufficient concentration to enable its detection. In many biomedical, food testing and environmental applications, the detection limit was restricted. Thus, the sample must first be concentrated before the detection process is carried out. Accordingly, this review provides a comprehensive review of recent advances for sample preconcentration with emphasis on utilizing ion concentration polarization (ICP) effects in micro/nanofluidics platforms. We start with a brief introduction regarding the importance of preconcentration using micro/nanofluidics platforms, followed by in-depth discussions of the ICP effects for the preconcentration and applications to biomedical analysis, food testing and environmental monitoring. Finally, the article concludes with a brief perspective on the future development of the field.

The stacking of a cationic analyte (i.e., rhodamine B) at the interface between a sample reservoir and channel in a microchip electrophoresis device is described for the first time. Stacking at negative polarity was by micelle to solvent stacking where the dye was prepared in a micellar solution (5 mM sodium dodecyl sulfate in 25 mM phosphoric acid, pH 2.5) and the channel was filled with high methanol content background solution (70% methanol in 50 mM phosphoric acid, pH 2.5). The injection of the stacked dye into the channel was by simple reversal of the voltage polarity with the sample solution and background solution at the anodic and cathodic reservoirs of the straight channel, respectively. The enrichment of rhodamine B at the interface and injection of the stacked dye into the channel was clearly visualized using an inverted fluorescence microscope. A notable sensitivity enhancement factor of up to 150 was achieved after 2 min at 1 kV of micelle to solvent stacking. The proposed technique will be useful as a concentration step for analyte mixtures in simple and classical cross-channel microchip electrophoresis devices or for the controlled delivery of enriched reagents or analytes as narrow plugs in advanced microchip electrophoresis devices.
