Analisis Senyawa Aktif Trigeminal Andaliman dengan Variasi Metode Pengeringan dengan Pendekatan GC-MS

Abstract: Sanshool compounds are the trigeminal active compounds in andaliman (Zanthoxylum acantho-podium DC) with a numbing and tingling sensation. The analysis of such compounds is usually done through HPLC approach; however, limited studies have reported that the analysis of such compounds could be conducted with Gas Chromatography-Mass Spectrometry (GC-MS). This method could save research time and funding by analyzing both sanshools and volatiles simultaneously, which would describe the complete profile of andaliman… Show more

“…One of the features of Andaliman when used as a spice in cooking is that the shelf life of the food is generally longer [7]. Several studies have shown that Andaliman fruit has antioxidant [8,9] and antimicrobial activity [9,10], also has an immunostimulating effect [11]. This provides an opportunity for andaliman as a raw material for antioxidant or antimicrobial compounds for the food industry, including sausages.…”
