Análisis fisicoquímico de frutos de Syzygium paniculatum en diferentes estados de maduración

Abstract: se analizó el contenido de minerales por espectrofotometría de absorción atómica. Se concluye que los frutos de S. paniculatum son un producto que tienen potencial para ser explotado para consumo humano en Bogotá, de acuerdo con las características fi sicoquímicas encontradas y el contenido de fenoles. A su vez, se sugiere realizar análisis fi toquímicos que complementen un estudio de la bioprospección del fruto.Palabras clave-caracteriz ación fi sicoquímica, cereza magenta, índice de madurez, polifenoles.
