An Overview of Natural Extracts with Antioxidant Activity for the Improvement of the Oxidative Stability and Shelf Life of Edible Oils

Abstract: Many plant materials, such as fruits and vegetables as well as herbs and spices, represent valuable sources of antioxidants. In recent years, wastes from agriculture and food industrial processes have been shown to be interesting sources for bioactive compound recovery, strongly contributing to the circular economy. Nowadays, because of their possible adverse effects on human health, there is a tendency to replace synthetic antioxidants with natural compounds. This review attempts to critically summarize the c… Show more

“…Targeting of tocopherol homologs on individual PUFAs was evident in the present study. This is in accordance with multivariate analysis of 14 vegetable oils which showed natural interrelations between α-tocopherol and LA, on the one hand, and between γ-tocopherol and ALA, on the other hand [1,2].…”

“…Interestingly, a positive correlation was also found between the antioxidant capacity of the hydrophilic fraction and tocopherols, which is probably due to the fact that oils containing a high proportion of tocopherols were also rich in polyphenols. For individual tocopherol homologs the concentrations effective for antioxidant activity vary; therefore, the beneficial effect of the tocopherol-polyphenol ratio was also observed in milk thistle oil, which contains α-tocopherol showing antioxidant activity only at low concentrations [1,2]. Targeting of tocopherol homologs on individual PUFAs was evident in the present study.…”

“…However, due to the higher content of unsaturated fatty acids, one of the main issues related to vegetable oils is the loss of their stability, due to several factors such as heating, exposure to light or oxygen, etc. [33][34][35][36]. EDM processing may involve high processing times (depending on the complexity of part and the expected quality), and thus, long periods of light and oxygen exposure, as well as high temperatures (depending on the processed material and the applied working regime).…”

“…Nevertheless, they are also present in the leaves of the Olea europea tree, as well as in pomace, the waste product of olive oil production. The presence of antioxidant compounds in waste products, such as leaves from pruning and pomace, means that there is a great interest in their recovery since natural extracts with antioxidant activity can be used as additives to enhance the quality and the duration of the product [ 2 ].…”
