An evaluation of some pear varieties for canning in New Zealand

Abstract: Evaluation by a taste panel of processed samples of 21 pear varieties revealed none superior to the standard 'Williams' Bon Chretien' as a canning variety. 'Conference' was the next highest-rated variety, and has possibilities for extending the pear canning season. Two other high-rating varieties, 'Beurre Capiaumont' and 'Doyenne du Cornice,' have no future as commercial canning varieties in New Zealand because of horticultural shortcomings .
