An egg ist ein ei, es un huevo, est un oeuf

Abstract: 1. Many of the mechanical tests devised to measure shell quality are inadequate because they fail to recognise the complex interaction between the organic and inorganic aspects of the eggshell. 2. Twelve structural modifications have been observed at the level of the mammillary layer and their presence correlated with a variety of environmental stress events. Occurring as they do in the basal layers of the shell, these morphological variants influence its mechanical properties. 3. The organic matrix proteins w… Show more

“…These biomacromolecules, especially the matrix proteins, are believed to be active in controlling the morphology and selective nucleation of polymorphs of the CaCO 3 layer of the eggshell (39). We focused our attention on understanding the molecular mechanism of eggshell calcification through extraction, purification, and characterization of the matrix proteins (40). Recently, a number of proteins and peptides from the goose eggshell extract were isolated, purified, and characterized.…”

“…Although one family of matrix proteins corresponds to the egg white proteins:lysozyme (14.4 kDa), ovotransferrin (78 kDa), and ovalbumin (43 kDa; Refs. 5,6), another group of proteins in the eggshell is the bone matrix proteins osteopontin and sialoprotein (7). Finally, the third group of proteins that is specifically found in the uterus includes the ovocleidins and ovocalyxins.…”

“…Photo (2) showed the confluent area in eggshell of Hy-Line brown strain at early stage. Solomon (1999), found good shell ultrastructural beneficial high confluence reflects good attachment with membranes and caps. Data presented in Photo (3) indicated the late fusion in eggshell of Hy-Line W-36 strain at early production cycle.…”
