An assessment of the current structure of food demand in urban China

Abstract: We evaluate the current structure of food demand in urban China by using household expenditure survey data from five provinces. Two complementary analyses are undertaken. First, an aggregate analysis based on a fractional logit model is used to examine how households allocate food expenditures across the food-at-home (FAH) and food-away-from-home (FAFH) categories. This is followed by a disaggregated analysis of how households allocated their FAH expenditures across 12 commodity categories. A Quadratic Almost … Show more

“…In addition, the expenditure elasticity for pork is higher in rural areas, whereas the expenditure elasticity of all the other meats is lower than in urban areas. Compared with some recent studies Ma et al 2004;Gould and Villarreal 2006), the expenditure elasticities of the present study seem generally reasonable. For example, the higher expenditure elasticities for poultry, beef and mutton align with the recent official statistics and other studies showing rapid increases in the consumption of poultry, beef and mutton (NBS 1996(NBS , 2006aWang et al 2005).…”

“…Therefore, the AIDS model has been chosen in the present study because of its theoretical and practical considerations, and popularity in demand analysis (Blanciforti and Green 1983;Fujii et al 1985;Fulponi 1989;Heien and Wessells 1990;Fan et al 1995;Huang 1999;Wu 1999;Ma et al 2004;Jabarin 2005;Gould and Villarreal 2006). In addition, the estimated coefficients in a linear approximate almost ideal demand system (LA-AIDS) are easy to interpret (Fulponi 1989;Jabarin 2005).…”

“…Many studies have found a positive relationship between income and the consumption of FAFH, such as Prochaska and Schrimper (1973), McCracken and Brandt (1987), Yen (1993), Gould and Villarreal (2006) and Bai et al (2010). Higher income households typically spend more on products and services such as leisure, variety, dining facilities (for example waiters), ambience and alcohol service .…”

“…Some studies on Chinese consumer behavior have focused on a particular subset of the entire population, especially the urban consumers (see Wei, 1997;Sun, Chang, & Yu, 2001). Other research papers dealt with specific expenditure categories such as food (see Ma, Huang, Fuller, & Rozelle, 2006;Gould & Villarreal, 2006;Min, Fang, & Li, 2004) and specific age groups such as elder (see Ying & Yao, 2006). On the other hand, many of the existing literatures have concentrated on consumption classes and expenditure on different commodities (see Yusuf & Brooks, 2010;Yusuf & Wu, 1997).…”
