Alternative Glycerol Balance Strategies among Saccharomyces Species in Response to Winemaking Stress

Abstract: Production and balance of glycerol is essential for the survival of yeast cells in certain stressful conditions as hyperosmotic or cold shock that occur during industrial processes as winemaking.
