Abstract: High-molecular-weight glutenin subunits (HMW-GS) encoded by alleles at the <em>Glu-A1</em>, <em>Glu-B1</em>, and <em>Glu-D1</em> loci confer unique bread-making properties of common wheat (<em>Triticum aestivum</em> L.).
