“…Lower proportion of G:C>A:T transitions at CpG dinucleotides (attributed to spontaneous deamination of cytosine) identified in ESCC samples in this study is in line with previous studies from India [47] . Higher frequency of G:C>A:T transitions at non-CpG sites can be attributed to alkylating agents in food and environment [48] . Of note, nitrosamines in alcoholic beverages [49] and processed meat [50] are known to increase the risk of esophageal and stomach cancer, respectively.…”

“…13 Groenen et al found a strong alkylating activity in samples of sauerkraut after incubation with nitrite. 14 Walker et al (1996) analyzed the tyramine content of 51 food samples by means of liquid chromatography. They found a dangerously high concentration of tyramine at 7.75 mg/250 g in sauerkraut.…”

“…Additionally, for the first time, we found that several oncogenes are in the format of ecDNA amplicons in GCA patients and that different oncogenes could coamplify in the same ecDNA amplicon. Interestingly, we found oncogene ecDNA amplicons were associated with a high frequency of chromothripsis in our GCA cohort, and such a high frequency of chromothripsis in our cohort is likely due to high degree of DNA damage induced by nitrosamine exposure from a local diet [45][46][47][48][49][50] . We propose that local dietary habits from the geographic region may have contributed to ecDNA occurrence in our GCA cohort.…”

“…Accumulating evidence has demonstrated that nitrosamine is a very important factor for DNA alkylation, synthesis disorder, high instability and even DNA double strand breaks [45][46][47][48][49][50] . Thus, we suspected that nitrosamine exposure in our GCA cohort may accumulate DNA damage, potentially inducing a high frequency of chromothripsis.…”
