Aflatoxins in food systems: recent advances in toxicology, biosynthesis, regulation and mitigation through green nanoformulations

Abstract: Aflatoxins are hepatocarcinogenic and immunosuppressive mycotoxins mainly synthesized by Aspergillus flavus, A. parasiticus and A. nomius in food systems, causing negative health impacts to humans and other organisms. Aflatoxins contaminate most of the agri‐products of tropical and subtropical regions due to hot and humid conditions and persist in food items even after food processing steps, causing major threat towards the food security. Different physical and chemical strategies have been applied to mitigate… Show more

“…The use of encapsulated nanofungicides and a thorough examination of toxicological studies, the biological behavior of nanoparticles such as adsorption, delivery behavior, and release in environment could significantly enhance safety for the health, environment, and food sectors in the future. There is a pressing need to update nanotoxicological assays by integrating advanced tools such as genomics, metabolomics, transcriptomic, proteomics, and phenomics to expedite and endorse the toxicity of nanoparticles . Due to their small size, nanoparticles can penetrate into the body through ingestion, inhalation, or skin contact.…”

“…Food processors carrying the virus can cause direct contamination of food, while sewage often causes indirect contamination of food. Fungal hazards in food mainly include the harm caused by fungi and their toxins to food. Mold can destroy the quality of food, and some produce toxins, causing serious food safety problems. These biohazards are infectious or toxic and cause foodborne illness, severe diarrhea or physically debilitating infections, including meningitis. Chemical hazards in food can cause acute poisoning, chronic poisoning, allergies, affect physical development, fertility, carcinogenicity, teratogenicity, death, and other consequences to the human body, ,, mainly including naturally occurring chemicals, residual chemicals, artificially added chemicals in the machining process and accidentally contaminated chemicals. , Among chemical hazards, heavy metal pollution has always been one of the main reasons affecting the quality and safety of food in China, which can accumulate in the human body, and after reaching a certain threshold, it will begin to destroy various biochemical reactions in the human body and cause diseases.…”

“…1 The transmission of aflatoxins from farmed fish to human is a concern, which can pose dangerous threats to health. 2 Traditional antifungal agents, while effective, come with their own set of issues, including the potential for environmental harm and the emergence of drug-resistant fungal strains. As a result, there has been a push towards more sustainable and environmentally friendly solutions.…”
