Hygienic quality is a very important problem in milk and dairy products. Aflatoxins are produced by moulds, and it is known that the Aflatoxin M1 type, which can be found in milk and dairy products, is a potential risk for public health. In this study, the presence of Aflatoxin M1 in white and Tulum cheese samples collected from three different provinces of Turkey (Burdur, Bursa, and Elazig) was investigated with the ELISA method. 42 white and 42 Tulum cheese samples (total 84) were analyzed, and the samples were evaluated in terms of their compliance with the limits of the Turkish Food Codex. According to the results; 34 (40.47 %) of 84 cheese samples were contaminated with Aflatoxin M1, ranging from 250 to 559 ng/kg. Fifty (59.52 %) cheese samples were found below the detection limit, meaning they are negative in terms of Aflatoxin M1 and do not pose a risk. On the other hand, 2 samples (2.38 %) were over the tolerance limit of the Turkish Food Codex. Also, the incidence of Aflatoxin M1 in white cheeses was 35.71 % and 45.23 % in Tulum cheeses. Although it is not much above the legal limit, Aflatoxin M1 contamination in cheese may reduce the food quality and adversely affect human health. Therefore, it should be treated more carefully in the production of milk and dairy products. In addition, quality feeds should be used in the feeding of dairy animals.

Objective: Probiotic microorganisms which constitute an important part of functional foods are living creatures that have been proven to benefit human health. However, most of the time they lose their vitality entirely or partly before reaching the human gastrointestinal system due to the various degenerative processes that they are exposed to during food production stages. Those who have been able to maintain their vitality are exposed to destructive bioprocesses in the digestive system. Conclusion: It is possible to provide the probiotic microorganisms to reach the target point by maintaining their vitality at an optimum level utilizing the microencapsulation method which we could consider as a technological packaging process. In this study, information is given about microencapsulation methods applied to probiotic microorganisms and the coating materials used.

Aflatoxin M1 (AFM1) is the hydroxylated metabolite of aflatoxin B1 (AFB1), which is formed in the liver by cytochrome P450 enzymes and can be secreted into the urine, feces, and milk of mammals. AFM1 is a carcinogenic, cytotoxic, teratogenic, mutagenic and genotoxic agent that poses a significant health risk to both humans and animals. This study was conducted to determine the presence of AFM1 in both raw and ultra-high temperature (UHT) cow’s milk samples produced in the northern part of Cyprus, and to determine whether it poses a risk to public health. In this survey, a total of 20 UHT cow’s milk samples from 2 different milk brands produced in the northern part of Cyprus, and 22 raw cow’s milk samples collected from the different dairies were analyzed for the presence of AFM1 by high performance liquid chromatography (HPLC) with fluorescence detector after immunoaffinity cleanup. AFM1 could not be detected in any of the analyzed raw and UHT cow milk samples. The LOD and LOQ values of the HPLC-FLD method were 1.038 μg/kg and 3.145 μg/kg, respectively. The mean recovery and repeatability values of the method were 95.6% and 4.9%, respectively. Although the presence of AFM1 in milk samples produced in the northern part of Cyprus poses no major risk to public health, more milk samples and animal feed must be monitored on a regular basis to decrease potential consumer exposure.
