Acorn Isotopic Composition: A New Promising Tool for Authenticity Maps of Montado’s High-Value Food Products

Abstract: It is often overlooked that even food production is linked to the ecology of plants and animals. Living organisms respond to environmental short-and long-term variability: acknowledging this may help in the ultimate goal of valorizing a territory/product. We investigated acorns of the two main Quercus species of the Portuguese Montado, a main feed of the renown black Iberian pig. We tested their responses to an aridity gradient by morphological parameters and isotopic signature. Q. rotundifolia and Q. suber ac… Show more

“…The isotopic composition of atmospheric molecular nitrogen is homogeneous and δ 15 N in the atmosphere is 0‰ [43]. A similar δ 15 N abundance (0.7‰ ± 0.1‰ to 0.9‰ ± 0.2‰) in the forest soils of Mediterranean cork oak, holm oak, and randomly mixed Montados was recorded in the Portuguese Alentejo region [44]. Tomatoes (''St.…”

“…Although predictions based on modeled δ 18 O values alone are clearly not accurate enough to define the exact growth region, they are a marked improvement and complement to using a reference sample-based approach. When combined with other techniques, such as stable isotope analyses of hydrogen, nitrogen, carbon, or sulfur, which also show distinct geographical patterns depending on underlying bedrock/mineralogy or agricultural practice and have routinely been used in origin determination 11 , 56 , and together with other authentication methods like e.g. proteomics or trace element analysis 10 , the possible regions of origin may be even further constrained.…”

“…They are edible and exhibit a bitter taste because of tannins, which are plant poly phenolic compounds. Recently, acorns have been gaining attention as a cost-effective and sustainable food resource [13][14][15]. Lithocarpus edulis is a fast-growing and durable tree that does not require heavy maintenance and is resistant to sea breezes, diseases, and desiccation.…”
