A Systematic Mapping Study of Coffee Quality throughout the Production-to-Consumer Chain

Abstract: Coffee is one of the most consumed beverages in the world and is crucial in the economy of many developing countries. The search to improve coffee quality comes from many fronts, as do the many ways to measure quality and the factors that affect it. Several techniques are used to measure the different metrics to assess coffee quality, across different types of coffee samples and species, and throughout the entire process from farm to cup. In this work, we conducted a systematic mapping study of 1,470 articles … Show more

“…Roasting is an essential step in coffee processing. During roasting, the aromatic and gustatory qualities of coffee beans are developed (Bolek & Ozdemir, 2017; Caporaso et al, 2022; Chu et al, 2018; de Oliveira et al, 2016; García et al, 2019; Hakim et al, 2020; Rendón‐Mera et al, 2022; Santos et al, 2012). The degree to which coffee beans are roasted (i.e., the degree of roast) is a key factor that determine the taste of coffee.…”

“…A wide range of opportunities for further investigation has developed, including the need for standardized standards and ongoing study to address specific issues associated with different coffee kinds and processing techniques [57]. This covers a broad range of possible research avenues, from creating generally recognized procedures for evaluating the quality of coffee to examining the effects of various processing methods on fragrance profiles [58,59]. Additionally, learning about the subtle differences between various coffee varietals and their distinctive sensory qualities may provide insightful information about how to improve cultivation techniques and flavor consistency [60].…”

“…It is also a crucial product for the economy of several developing countries since it is ranked in the top ten most globally traded commodities. [1][2][3][4] However, the large consumption of this product can generate a high amount of solid waste that must be properly disposed of in landlls. Among these residues, the most important is the spent coffee grounds (SCG), material generated in the beverage preparation.…”
