A Study on Some Chemical Quality Indices of Whole Catla catla from Visakhapatnam Harbour Frozen at -20oC

Abstract:Fresh and frozen samples of Catla catla were collected from Visakhapatnam fishing harbour, frozen at -20℃ and stored across different durations upto the end of 180days. The samples were analyzed for Chemical quality indices namely TMAN (Trimethyl amine nitrogen), TVBN (Total volatile basic nitrogen), PV (Peroxide value) and TBA (Thiobarbitutric acid) during the storage period. Results are in consonance with the findings of earlier studies in terms of all the indices chosen for the present study.
