A strategy for accurately and sensitively quantifying free and esterified fatty acids using liquid chromatography mass spectrometry

Abstract: Fatty acid (FA) composition of foods dictates a diversity of aspects regarding food quality, ranging from product shelf life, sensory properties to nutrition.
