Lilium (Liliaceae) is an important wild plant and is used as food and traditional medicine worldwide. One Lilium cultivar (Lilium lancifolium) and 2 wild types (Lilium leucanthum and Lilium rosthornii) that are commonly distributed in Western China were investigated to completely utilize Lilium resources. The morphology of the flowers, bulbs, and scales and soluble sugar, total starch and amylose contents was remarkably different among the 3 Lilium species. Starches from the 3 Lilium species presented different granule size and shape. The starch of L. lancifolium exhibited higher swelling power and solubility than that of L. leucanthum and L. rosthornii. The starches from the 3 Lilium bulbs presented similar X-ray diffraction patterns and Fourier transform infrared spectroscopy. Among the 3 Lilium species, L. lancifolium showed the lowest crystallinity and the largest proportion of ordered structures in granule external region. Gelatinization temperatures and retrogradation percentage were significantly lower, but gelatinization enthalpy was significantly higher in L. lancifolium than those in L. leucanthum and L. rosthornii. Pasting properties of starch were different among the 3 Lilium species. Starch from L. lancifolium showed the highest degree of amylopectin branching, followed by L. leucanthum and L. rosthornii. Starches from L. leucanthum and L. rosthornii showed higher resistance to porcine pancreatic α-amylase hydrolysis compared to that of L. lancifolium. These results indicated that 3 Lilium bulbs exhibited remarkable differences in morphological, crystal, thermal, pasting, and hydrolysis properties of starches.

The starches separated from bulbs of four different lily cultivars (Lanzhou, Pinglu, Yixing‐1, and Yixing‐2) were investigated for physicochemical, morphological, crystalline, and thermal properties. AM content of lily bulbs starches from different cultivars ranged from 19.46 to 25.17%. The swelling power of starches ranged between 14.4 and 21.3 g/g, and the solubility ranged from 8.92 and 16.6% at the temperature of 85°C. Four cultivars of lily starches paste had excellent transparency and the transmittance value of Lanzhou lily as high as 54.7%. The transmittance of the gelatinized aqueous starch suspensions, from all lily cultivars, decreased with increase in storage period. The shape of starch granules varied from triangular to cylindrical and XRD of four lily starches all showed B‐type pattern. The transition temperatures and enthalpy of gelatinization (ΔHgel) were determined using DSC. Tp varied from 62.52 to 65.25°C. Pinglu lily starch showed the highest ΔHgel and gelatinization range (Tc–To) index among starches from four different lily cultivars.

Plants from the Lilium genus are a rich source of chemical diversity and have been the focus of natural products chemistry research for over twenty years. This manuscript provides a background on the chemistry and nomenclature of steroidal glycosides, as well as a chronological account of the progress between the years of 1989 up to 2014, with respect to their isolation and characterization from the genus. This review highlights the traditional use of lilies, as both food and medicine, and brings attention to the fact that the genus contains 110 accepted species of which the chemistry and biological activity of the steroidal glycosides from the majority have not been investigated to date. Thus, making the genus a relatively untapped resource that contains a potential treasure trove of chemical diversity waiting to be discovered.
