A polymorphism in the stearoyl-CoA desaturase gene promoter influences monounsaturated fatty acid content of Duroc × Iberian hams

Abstract: Data on 74 dry-cured hams from Duroc × Iberian pigs were used to examine whether the tag polymorphism AY487830:g.2228T>C in the promoter region of the stearoyl-CoA desaturase [SCD] gene affect fat desaturation and monounsaturated fatty acid (MUFA) as previously described in purebred Duroc hams. Samples were taken from sliced trays of dry-cured hams marketed as Jamón Ibérico de cebo, which were randomly purchased from the same supplier in different stores of the same supermarket chain. Genomic DNA was isolated… Show more

“…Also, in vivo inhibition of SCD activity diminished the maintenance of T FH and GC B cells by increasing the apoptosis-mediated cell death and expression of ER stress genes in T FH cells [52], but the mechanism still needs to be addressed. Accordingly, with these findings, Henriquez-Rodriguez and colleagues [163] described that B cellextrinsic SCD activity generates MUFAs to support early B cell development and GC. Also, this SCD activity sustains B cell metabolic fitness partly by promoting OXPHOS and mTORC1 activity, thus suppressing ER stress.…”

“…Also, this SCD activity sustains B cell metabolic fitness partly by promoting OXPHOS and mTORC1 activity, thus suppressing ER stress. Therefore, using in vivo models, it was described that B cells depend mostly on B cell-extrinsic SCD activity to provide MUFAs, which is required for sustaining antibody production [163]. These results suggest a role for SCD and fatty acid metabolism in the maintenance of the humoral response and maybe a novel target for regulating excessive T FH cell responses, especially in autoimmunity.…”

“…Few other enzymes are involved in the process of fatty acid synthesis in meat, such as fatty acid synthase FASN (Zhang et al, 2014), diacylglycerol acyltransferase -DGAT (Zhang et al, 2014) and SCD (Henriquez-Rodriguez et al, 2015). Casas et al (2006) as well as other researchers found that FABP4 genes are also candidate genes.…”
