A novel method for monitoring troponin T fragment from rabbit skeletal muscle during aging using quartz crystal microbalance

Abstract: The QCM analysis of muscle and myofibrillar extracts using anti-TnT antibody-immobilized sensor can be used as a convenient tool for monitoring the extent of aging of meat. © 2015 Society of Chemical Industry.

“…In postmortem muscle, after rigor mortis, actin and myosin do not present enhanced degradation [3]. Several key myofibrillar proteins, however, have been shown to be degraded at differing rates [4]. TnT degradation and the detection of fragmentation products, represent a widely reported and well-established marker of skeletal muscle aging also in several animal products intended for commercial distribution in the food industry [4][5][6][7].…”

TnT degradation and the detection of fragmentation products, represent a widely reported and well-established marker of skeletal muscle aging also in several animal products intended for commercial distribution in the food industry [4][5][6][7]. TnT fragments have been detected in various animal species such as beef, rabbit, lamb, fish, camel and poultry and have been positively associated with increased meat tenderness during aging [8][9][10][11][12][13].…”

“…TNNT1mRNA was generally upregulated in indestructible RPE cells and human induced pluripotent stem cells (HIPSCs), with self-renewal ability (8). The expression of attnt1mrna in some cancer tissues was higher than that in normal tissues (9). The stable expression of tnnt1 in arpe-19 cells affected the tissue of actin filaments and enhanced the migration capacity of actin filaments (10).…”

“…However, they tend to have low sensitivity and poor reproducibility and often requires expensive equipment [9,10]. A wide range of sensors, such as surface acoustic wave sensors [11,12], quartz crystal microbalance sensors [13] and micro-cantilever beam sensors [14], have been extensively reported for detecting explosives. However, these sensors depend on the accuracy of the processing method and the quality of the device [15,16].…”
