A Mannan Produced by Saccharomyces Rouxii

Abstract: .IRs'l-RACT The main slime polysaccharide produced by Sacchnrornyces r o z~z i i during the fermentation of D-glucose to D-arabitol is a nlannan. i\cetolysis of the polymer has afforded di-and tri-saccharides in good yield, but 110 higher oligosaccharides \irere produced. T h e disaccharide is shown by methylation and lead tetraacetate oxidation to be 2-O-ol-~-ma11nopyranosp~-~-mannose, establishing the presence of a 1,2-a-1inl;agc in the polysaccharide. On acid hydrolysis the methylated mannan gives mainly 2,… Show more

“…Oxidation of fraction IVa with 4 moles of periodate a t room temperat~~re for 10 h gave a product which had the same mobility and color reactions on paper chromatograms as 2,3-di-0-methyl-L-arabinose. The syrupy product crystallized when seeded with an authentic sample of 3,4-di-0-methyl-~-manr1ose (21). Recrystallized from ethyl acetate, it had n1.p.…”

“…I t is reasonable to consider overoxidation of this s~tbstailce possible since it seeins characteristic of yeast mannaiis to have a sigiiificailt proportion of their man~iose units (3lIU) 1inl;ed gl~~cosidically a t carbon-2 and/or cai-bon-3 (2)(3)(4)(5). If in a reduciiig encl position, such units are 1;iiown to be susceptible to overoxiclation (3)(4)(5).…”
