A Flavour of Class‐Based Spatial Change: Geographies of Haute Cuisine in the Netherlands

Abstract: This paper explores the changing culinary geography of the Netherlands applying GIS methods. The changing location of Michelin star-rated restaurants in the period 1986-2016 is put into a context of the changing relations between urban centres and their suburbs as well as the Randstad and the rest of the country.
