A Cross-Sectional Study of Salmonella in Pork Products in Chiang Mai, Thailand

Abstract: The occurrence of Salmonella in food of animal origin in Chiang Mai province was investigated by using a cross-sectional study during several phases of the pork production chain (cutting, transport, and retail) and of the environment in the cutting unit of a slaughterhouse. In total, 173 pork samples were obtained during the cutting phase, 173 samples from transported pork, 200 samples from retail products, and 300 samples from the slaughterhouse environment. “…Salmonella enterica serovar Rissen is reported to be among the most frequent serotypes found in Thailand and remains in swineherds for extended periods of time (Dorn‐in et al., ). This serotype is also the most prevalent serotype isolated from pork carcasses and ready‐to‐eat products in Thailand and has been shown to efficiently transmit from swine to humans during food production and processing (Sanguankiat et al., ). Hendriksen et al.…”

“…In recent years, Salmonella enterica serovar Rissen (S. Rissen) has become a common serotype found in swine herds, pork and chicken products and gastrointestinal human patients throughout different regions of the world (Darwin and Miller 1999;Lee et al 2016;Saito et al 2016). In Thailand, S. Rissen is the most prevalent serotype isolate from swine and pork products (Dorn-In et al 2009;Sanguankiat et al 2010). Salmonellosis cases owing to S. Rissen infections in Europe (Garrido et al 2015;Bonardi et al 2016;Campos et al 2016;Frasson et al 2016) and America (Blondel et al 2015;Molina et al 2016) have been reported.…”
