A Blockchain-based Supply Chain Tracing for the Swiss Dairy Use Case

Abstract: The heterogeneous nature of raw milk production, transportation, processing, transformation, and storage have been triggering concerns on the authenticity of dairy products. For the first time known, this work studied these concerns via interviews with consumers and producers of dairy products. Therefore, this paper introduces "NUTRIA" as a decentralized dairy product Supply Chain Tracing (SCT) system, designed and implemented based on real-world observations of the Swiss dairy supply chain and conducted in co… Show more

“…A noteworthy development is the use of the public Algorand blockchain in the Fontina PDO cheese supply chain, which is considered a less energy-demanding public blockchain system [39]. In Switzerland, the NUTRIA system offers decentralised dairy product supply chain tracing combining both Ethereum and private blockchains [40]. While progress is evident, most of the recent projects focused on milk supply chains, which are less complex than processed products such as (feta) cheese.…”

“…This system was created in collaboration with dairy producers and is designed to overcome the limitations of traditional and centralized SCT approaches. They also discussed the system’s benefits, including social aspects and risks [ 22 ]. Rünzel et al (2021) designed a sustainable blockchain-based honey supply chain.…”
