Abstract: Eggs, though a very nutritious food, also have high amounts of cholesterol and hence are not recommended to be consumed regularly by persons having hypercholesterolemia and associated cardiovascular diseases (CVD). In this context, an attempt was made in this study to reduce the cholesterol content of eggs by diet manipulation, using two naturally available and already proved hypocholesteromic agents [red palm oil (RPO) and grain amaranth]. Thirteen experimental rations using raw and popped grain Amaranth and … Show more

“…The utilization of amaranth grain is particularly interesting after the occurrence of bovine spongiform encephalopathy and consecutive prohibition of meat-and-bone meals in the nutrition of all farm animal species in Europe [19]. The results on feed intake, feed conversion, and live weight gains varied considerably, within-species differences in animal responses due to natural variation and age, feed formulation, and processing method used [20][21][22][23][24][25].…”

“…Additionally, many recent studies had reported beneficial health properties of RPO. For instance, RPO has been demonstrated to improve vitamin A status, lipid profile and health disorders such as carotid atherosclerosis [ 6 8 ].…”

“…For example, 18 chain length ω-3 and ω-6 acids may be converted into signalling molecules such as prostaglandins, leukotrienes and thromboxanes [4]. Similarly, rare in the typical diet palmitoleic acid (ω-7) probably plays an important role in the regulation of hepatic versus adipocyte lipogenesis [3, 5]. Consuming food rich in this acid may beneficially affect both energy, homeostasis and metabolic health [5], for example, trans-palmitoleic acid in plasma phospholipids is strongly inversely associated with incident T2 diabetes mellitus [6].…”

This acid also reduces appetite and may help to combat other diseases, although the mechanism of its action has not been fully elucidated [7, 8].…”
