Increased chemical acetylation of peptides and proteins in rats after daily ingestion of diacetyl analyzed by Nano-LC-MS/MS

Abstract: BackgroundAcetylation alters several protein properties including molecular weight, stability, enzymatic activity, protein–protein interactions, and other biological functions.
