Meat quality of Maremmana young bulls

Abstract: Maremmana is a local Italian breed reared in southern Tuscany and northern Latium. Twenty-two young bulls were reared in pasture system with concentrate supply (PSCS), whereas 20 young bulls were reared in feedlot intensive system (IS) in order test differences between meat typologies. The bulls were slaughtered at 18 months old. The performances at slaughtering were similar between finishing systems. IS bull meat has shown higher cooking loss than PSCS bull meat (p < 0.001), higher moisture content (p <… Show more

“…This is associated with the fact that not all SFAs are hypercholesterolemic, and MUFAs exert a protective effect, likewise PUFAs. It is assumed that an AI value lower than 0.5 is beneficial for human health [84], although some authors recommend an atherogenicity index for animal lipids in the range from 0.5 to 1.0 [81,85]. In the present study, the values of AI of the organically and conventionally produced meat did not differ significantly.…”

“…According to the relevant nutritional recommendations, the PUFA/SFA ratio in the human diet should be 0.4 or higher [55]. Some authors [81] suggest that this ratio should be in the range from ≥ 0.45 to 1.0. In the present study, these criteria were fulfilled only by the meat from the organically farmed fallow deer.…”

“…In the last years, the high interest in animal welfare, in the organic animal products, and the need of healthier diets in Western Country populations, led to more sustainable livestock systems. The rustic breed is more suitable for this purpose, and recent studies confirmed the Maremmana suitability to the extensive farming conditions (TOCCI & SARGENTINI, 2020).…”

“…From 15 to 24 months (fattening period) the fresh grass consumption, estimated comparing grazed areas with ungrazed areas, was on average 20.0 kg/head/day. In the same age range the concentrate supplementation is reported in TOCCI & SARGENTINI (2020). The chemical composition of pasture feed is in table 1.…”
