Abstract: The present study optimized the extraction process of bioactive compounds present in ginger (Zingiber officinale) dried at 80 °C, using ethanol:water 70:30 (v/v) as solvent. The extracts were evaluated for antioxidant activity by the 2,2’-azino-bis(3-ethylbenzothiazoline6-sulfonic acid (ABTS) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical reduction methods and by the chelating activity of FeII ions.
