Abstract:USE OF COMPLEXING AGENTS FOR INCREASED TARGETED PRODUCTION OF CYCLODEXTRINS BY COMMERCIAL ENZYME TORUZYME®. Cyclodextrins (CDs) are cyclic oligosaccharides, products of the intramolecular transglycosylation reaction promoted by the enzyme cyclomaltodextrin glucanotransferase (CGTase). The most commonly produced CDs are a-CD, b-CD and g-CD, composed of 6, 7 and 8 glucose molecules, respectively.
