Bioactive and Functional properties of gelatin peptide fractions obtained from sea bass (Dicentrarchus labrax) skin

Abstract: Fish skin is one of the most common resources of gelatin, which can be hydrolyzed bioactive peptides. In this study, gelatin from sea bass skin (SBS) was hydrolyzed with flavourzyme  to obtain peptide fractions with different molecular weights and determined their bioactive and functional properties. All peptide fractions obtained showed antioxidant activity (DPPH and FRAP). The bass gelatin peptide fraction 1 (BF1) (≤5 kDa) showed the highest DPPH (44.9%) and FRAP (42.04 mmol Fe +2 /g and 22.98 mmol trolox/g… Show more

“…Amide I, II and III were related to the skeleton structure of peptide chain. The amide I bands of ASC, PSC and HSC caused by C=O stretching vibration along the peptide backbone were observed at about 1657, 1656 and 1656 cm -1 respectively, which was a sensitive indicator of secondary structure of the protein (Surewicz & Mantsch, 1988;Woo et al, 2008;Tekle et al, 2022). This confirmed that ASC, PSC and HSC had the typical triple helix structure of collagen, which was formed via the hydrogen bonds between N-H and C=O (Wang et al, 2018;Ahmed et al, 2018).…”

“…Bioactive peptides hydrolyzed from protein are the general term for 2-peptides to complex peptides composed of amino acids. Modern nutritional studies have pointed out that bioactive peptides hydrolyzed from protein can be more effectively absorbed by the body, thereby playing a specific role or improving the growth of intestinal flora to provide probiotic effects (Ji et al, 2022;Li et al, 2022;Tekle et al, 2022;Wei et al, 2022). For example, Ruann J. S. de Castro and Hélia H. Sato found that soy protein isolate hydrolysate had a 7-fold enhanced antioxidant activity compared with soy protein isolate (Castro & Sato, 2014).…”

“…Amide I peak is the most intense absorption band in proteins, which is mainly associated with the C=O and C-N stretching vibrations and also relates to the backbone conformation (Tekle et al, 2022). Another prominent absorption band is the amide II peak, which is associated with in-plane N-H bending, and the C-N and C-C stretching vibrations (Van Wyk & Amonsou, 2022).…”
