“…The main VOCs in pepper fruits are esters and terpenes. Other trace compounds include lipoxygenase derivatives, nitrogen–sulfur compounds, phenolic derivatives, norcarotene, carbonyl groups, alcohols, and other hydrocarbons [ 5 , 34 ].
